Introduction: Chu Hou sauce, a popular condiment from Foshan in Guangdong Province, was named after Liang Chuhou, a chef who invented the sauce more than 200 years ago during the reign of Emperor Jiaqing of the Qing Dynasty. The sauce can be used to cook chicken, duck, fish and meat, and Chu Hou Chicken is the most well-known dish. A saying in Foshan goes like this that a trip to Foshan would be wasted if one did not try Chu Hou sauce. Nowadays, Chu Hou sauce has become an indispensible seasoning in Foshan cuisine.
